Turkey Meatball Sub

The deli classic, rebuilt at home: four juicy turkey meatballs tucked into a toasted whole wheat sub roll with marinara and a blanket of melty mozzarella. Forty-five grams of protein in a sandwich that eats like a cheat meal but tracks like a plan.

Ingredients

Method

  1. 1Heat the oven to 425°F (220°C) and line a small baking sheet with foil.
  2. 2Mix the ground turkey, beaten egg, breadcrumbs, Italian seasoning, salt, and pepper just until combined. Shape into 4 equal meatballs.
  3. 3Bake 15 to 18 minutes, until browned and 165°F in the center.
  4. 4Meanwhile, warm the marinara in a small saucepan over low heat. Split and lightly toast the sub roll under the broiler, 1 to 2 minutes.
  5. 5Nestle the meatballs into the roll, spoon over the warm marinara, and scatter the shredded mozzarella on top.
  6. 6Return to the oven or broiler for 2 to 3 minutes, until the cheese is melted and bubbly. Rest 1 minute, then serve.
