Ingredients
Method
- 1Heat the olive oil in a large nonstick skillet over medium heat. Add the diced bell pepper and sliced turkey sausage and cook 2 to 3 minutes, until the sausage is lightly browned and the pepper softens.
- 2Add the spinach and cherry tomatoes. Cook 1 minute, stirring, until the spinach wilts and the tomatoes just start to soften.
- 3In a bowl, whisk the egg whites and whole egg with a pinch of salt, black pepper, and garlic powder. Pour over the vegetables in the skillet.
- 4Cook gently, pushing the edges toward the center with a spatula and folding the eggs over, until just set and still soft, 2 to 3 minutes. Do not overcook.
- 5Crumble the feta over the scramble, toast the sourdough, and serve the scramble alongside the sausage and toast.
