  1. 1Pound the chicken breast to an even thickness, season with salt and pepper, and grill or sear in a lightly oiled skillet over medium-high heat 5-6 minutes per side, until the internal temperature hits 165°F. Rest 5 minutes, then slice across the grain.
  2. 2Make the dressing: whisk the Greek yogurt, anchovy paste, lemon juice, Dijon, grated garlic, and Worcestershire until smooth. Season with salt and cracked pepper.
  3. 3Make the croutons: toss the bread cubes with the olive oil and a pinch of salt, then toast in a dry skillet over medium heat 3-4 minutes, shaking the pan, until golden and crisp.
  4. 4Toss the romaine with about 3/4 of the dressing. Pile the sliced chicken on top, add the croutons and shaved parmesan, and finish with the remaining dressing and more cracked pepper.
