Blueberry Protein Baked Oatmeal with Almond Butter Swirl

A single-serving ramekin of baked oatmeal that eats like cake: jammy burst blueberries folded through a whey-protein oat batter, finished with an almond butter swirl and a spoonful of Greek yogurt. 43 grams of protein before 8 AM, and the oven does most of the work.

Ingredients

Method

  1. 1Heat the oven to 375°F (190°C). Lightly grease a 12-oz oven-safe ramekin.
  2. 2Stir the oats, protein powder, baking powder, cinnamon, and a pinch of salt together in a mixing bowl, breaking up any protein-powder clumps.
  3. 3In a second bowl, whisk the egg white, Greek yogurt, almond milk, and honey until smooth. Pour the wet mix over the dry and stir just until combined, then fold in the blueberries.
  4. 4Scrape into the ramekin and smooth the top. Bake 22 to 25 minutes, until the center is set and the edges turn golden.
  5. 5Cool 3 minutes so it finishes setting. Drizzle with the almond butter, add an extra spoonful of yogurt on top, and eat warm.
